Two-day Baba
More or less, it took two days to prepare Baba Ghannouj this week, though active time clocked at just under 30 minutes. We grilled out last night, and I roasted a plump eggplant in preparation for another meal. Today, I reached for the roasted eggplant (from the refrigerator) and blended it with my remaining baba ingredients. Here’s my basic baba recipe: Two-Day […]
Slowing down with Slow Food Austin
For a time during my Colorado years, I lived in Manitou Springs, a few blocks away from one of my choice restaurants, Adam’s Mountain Cafe. Adam’s waiting line was a place for lively conversation, often in-depth with lengthy waits being the norm. From appetizers to desserts, food arrived slowly, and nobody seemed to be in […]
Beyond Hobo Stew
When the cookery Cub Scouts offer to cook, I step aside . . . but not too far away when slicing and dicing are called for because we’ve already acquired a few stitches thanks to a very impressive pocketknife injury (not sustained while cooking . . . but through that transferable craft of whittling). The boys put their […]
Siding with Goldilocks
Serve it hot, chilled, or just right, but we sided with Goldilocks and finished the last drop of this bowl at room temperature. Nathalie Dupree inspired this version of roasted red bell pepper soup in her Matters of Taste cookbook. I’ve grown to love several of Nathalie’s later recipes from her Comfortable Entertaining cookbook, and when I came across Matters […]
Can this flan be saved?
Hits and misses . . . there’s no mistaking this sure miss. Can this flan be saved? For presentation’s sake, little hope rests in recovering the flan. Can it still be eaten? Around here, of course. Part of it has already been enjoyed at the time of this posting. Looks really aren’t everything. The flan still delivers, despite disappointment.
Cookbook release . . . Modern Spice
“Modern Spice,” a new cookbook with inspired Indian flavors by Monica Bhide, will hit shelves next week. The Cookery would love to add this one to the collection. Monica offers cooking encouragement with a subtle approach. Read her recipes and give them a chance. We tested Monica’s Butternut Squash, Coconut and Lamb Stew back in February to headline […]
Second-hand cookbooks measure up
Second-hand cookbooks Second-hand cookbooks measure up if you give them a chance. The Cookery extends a grateful thanks across Austin to a book treasure hunter, our friend Jane, for the latest acquisition for our collection. Middle Eastern, vegetarian, French or light and easy, we’ve learned not to snub our noses at used cookbooks. Looking to pick up a […]
Bakers Ready
Feeding the masses? Preheating required. We received these bakers washed and wrapped to help prepare a meal for a large group. We fired up The Cookery’s oven for this hot potato project. 25 potatoes. 350 degrees. 90 minutes. Done.
Love on the griddle
If we prepared French Toast often, this breakfast fest wouldn’t be a treat. From whole wheat bread to real maple syrup, help the kids in the kitchen put a heart-healthy spin on French Toast. If you’re due for some authentic French romance, visit The French Fork for a lesson on making and enjoying crepes.
Griddle Time
What’s up with the griddle? If the secret to a happy marriage is a waffle maker, then part of the fun in learning to cook with the kids is griddle time. If you’re stashing one in your cabinet, or storing your griddle in the garage with the camping gear, dust it off and add butter. With our large slab of iron in action this week, […]
